Irresistible Crockpot Beef Barbacoa

A flavorful, tender, and easy-to-make beef barbacoa that transforms humble ingredients into a savory feast, perfect for gatherings.

  • 1 tbsp vegetable oil
  • 3.5 lb beef roast (cut into 2-inch chunks)
  • 2/3 cup beef broth
  • 1 tbsp salt
  • 1.5 tbsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1.5 tsp cumin
  • 1 tsp paprika
  • 1 tsp black pepper
  • 1 tbsp apple cider vinegar
  • 1 dried bay leaf
  • 2 limes (cut into wedges)
  • 3 tbsp chopped cilantro

Instructions

  1. Sear the beef: Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add your chunks of beef. Sear them on all sides until they develop a nice, brown crust (about 4-5 minutes).
  2. Transfer to crockpot: Once the beef is nicely browned, transfer it to your slow cooker.
  3. Mix the sauce: In a medium bowl, combine the beef broth, salt, chili powder, garlic powder, onion powder, cumin, paprika, black pepper, apple cider vinegar, and the bay leaf. Whisk together to combine everything, then pour it over the beef.
  4. Set and forget: Cover the crockpot and cook on low for about 480 minutes or high for 300 minutes.
  5. Shred the beef: Once the cooking time is up, remove the beef from the crockpot. Using two forks, shred the meat into bite-sized pieces.
  6. Serve it up: Serve your barbacoa in soft tortillas, topped with fresh cilantro and lime wedges.

Notes

For a fun twist, serve with rice, beans, or nachos. You can also add pickled red onions for extra flavor.
