Slow Cooker Beef Tips and Gravy

  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder

  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 1½ cups beef broth
  • 3 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce (optional)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 2 tablespoons cornstarch
  • 3 tablespoons water

Instructions

  1. Sear the Beef: Start by drizzling the olive oil into a large skillet over medium-high heat. Sprinkle the beef chunks with salt, black pepper, garlic powder, onion powder, and paprika. When the oil is shimmering, add the seasoned beef in batches and let it brown for about 3-4 minutes on each side.
  2. Transfer to Slow Cooker: Once the beef is beautifully browned, transfer it to your slow cooker.
  3. Sauté the Aromatics: In the same skillet, add your diced onions and sauté for about 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
  4. Combine Everything: Pour the sautéed onions and garlic over the beef in the slow cooker. Then, add the beef broth, Worcestershire sauce, soy sauce (if using), dried thyme, and dried parsley. Stir gently to combine.
  5. Slow Cook to Perfection: Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours.
  6. Thicken the Gravy: Once the cooking time has passed, mix the cornstarch with the water until smooth. Pour it into the slow cooker, stirring gently. Cook on high for another 30 minutes to thicken.
  7. Serve and Enjoy: Once thickened, taste and adjust seasoning if needed. Serve over mashed potatoes, rice, or noodles.

Notes
