Slow Cooker Cowboy Casserole

A cozy and hearty dish featuring ground beef, beans, potatoes, and cheese, perfect for busy weeknights and gatherings.

  • 1 pound lean ground beef
  • 1 cup finely diced sweet yellow onions
  • 1 tablespoon minced garlic
  • 1 (16-ounce) can dark red kidney beans, undrained
  • 1 (14.5-ounce) can petite diced tomatoes with juice
  • 1 (10-ounce) can diced tomatoes with fire roasted hatch chilies, with juice
  • 1 cup frozen corn
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly cracked black pepper
  • ¼ teaspoon chipotle powder
  • pounds Yukon Gold potatoes, sliced about inch thick
  • 1¼ cups Colby and Monterey Jack cheese, freshly shredded

Instructions

  1. Brown the Ground Beef: Start by grabbing a skillet and heating it over medium-high heat. Add the lean ground beef and cook until it’s browned. Use a slotted spoon to transfer the meat into your slow cooker.
  2. Sauté the Aromatics: In that same skillet, toss in the finely diced onions and sauté for about 3-4 minutes until translucent. This adds sweetness to the dish!
  3. Add Garlic: Now add the minced garlic to the skillet and sauté for an additional minute or until fragrant. Transfer this mixture into the slow cooker.
  4. Combine the Beans and Tomatoes: Toss in the undrained kidney beans, petite diced tomatoes, and fire-roasted chilies into the slow cooker. Stir well.
  5. Sprinkle in the Seasonings: Add the frozen corn, kosher salt, black pepper, and chipotle powder. Mix everything together.
  6. Layer the Potatoes: Place the sliced Yukon Gold potatoes over the mixture in the slow cooker.
  7. Cook Low and Slow: Cover your slow cooker and set it to cook on low for about 6-7 hours or high for 4 hours.
  8. Add the Cheese: About 30 minutes before serving, sprinkle the shredded cheese over the top and cover again to let it melt.

Notes

Serve with fresh chopped parsley or cilantro on top and a side of crusty bread or a green salad.
