  • 1 can canned pineapple rings (well-drained)
  • 2 tablespoons additional sugar for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, beating until well combined.
  4. Mix together the flour, baking soda, and salt in a separate bowl.
  5. Combine the wet and dry ingredients, mixing until just combined.
  6. Prepare the pineapple by slicing the rings into bite-sized chunks.
  7. Scoop the dough onto parchment-lined baking sheets, leaving space between cookies.
  8. Top each cookie with a pineapple chunk and sprinkle with additional sugar.
  9. Bake for 12-15 minutes or until edges are lightly golden.
  10. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
