The Perfect Strawberry Banana Bread

A delightful bread that combines the sweetness of ripe bananas with the fresh zing of strawberries, perfect for any occasion.

  • 2 ripe bananas
  • 1 cup pancake mix
  • 1/2 cup sugar
  • 1/4 cup melted butter
  • 2 large eggs
  • 1/2 cup chopped strawberries
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract
  • For the glaze:
  • 1/2 cup powdered sugar
  • 12 tablespoons milk
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mash the bananas in a mixing bowl until mostly smooth.
  3. Mix in the melted butter, sugar, eggs, and milk until combined.
  4. Combine the pancake mix with the wet ingredients, folding gently.
  5. Add the chopped strawberries and fold in carefully.
  6. Prepare a loaf pan by greasing it or lining it with parchment paper.
  7. Pour the batter into the pan and bake for 60-70 minutes.
  8. Cool the bread in the pan for 10 minutes, then transfer to a wire rack.
  9. Make the glaze by whisking together powdered sugar, milk, and vanilla extract.
  10. Drizzle the glaze over the cooled bread.

Notes

For a vegan version, replace eggs with chia seeds and use non-dairy butter.
