Strawberry Cottage Cheese Muffins

  • 1 cup cottage cheese
  • 1 cup strawberries, chopped
  • 1/2 cup sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prep your muffin pan by lining with paper liners or greasing.
  3. Mix the cottage cheese, sugar, vegetable oil, eggs, and vanilla extract in a large bowl until well combined.
  4. Add the sifted flour, baking powder, baking soda, and salt into the wet mixture and gently mix until just combined.
  5. Fold in the chopped strawberries into the batter.
  6. Fill each muffin cup about 3/4 full with the batter.
  7. Bake for about 20-25 minutes or until golden brown.
  8. Cool the muffins in the pan for 5 minutes, then transfer them to a wire rack.
