Strawberry Cream Cheese Muffins with Streusel Topping

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, softened
  • 1/4 cup cream cheese, softened
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped
  • 1/4 cup rolled oats
  • 2 tablespoons brown sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix the dry ingredients: whisk together flour, sugar, baking powder, baking soda, and salt.
  3. Cream the butter and cream cheese until smooth, about 2-3 minutes.
  4. Add the egg and vanilla extract to the butter-cream mixture and mix well.
  5. Combine the wet mixture into the dry mixture and mix until just combined.
  6. Fold in the chopped strawberries gently.
  7. Prepare the streusel by mixing oats, brown sugar, flour, and melted butter until crumbly.
  8. Fill the muffin cups 2/3 full and sprinkle streusel on top.
  9. Bake for 18-20 minutes or until a toothpick comes out clean.
  10. Cool for 5 minutes before transferring to a wire rack and enjoy!

Notes

For a healthier version, swap all-purpose flour for whole wheat or almond flour. You can also use frozen strawberries.
