Strawberry Lemonade Quick Bread

A delightful quick bread combining the tartness of lemons and the sweetness of strawberries, perfect for breakfast or as a snack.

  • 2 cups (240g) all-purpose flour
  • ½ cup (100g) granulated sugar
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 8 ounces (227g) fresh strawberries (about 10 medium strawberries), hulled and chopped
  • ¾ cup (180mL) milk
  • ½ cup (113g) unsalted butter, melted
  • 1 large egg
  • ½ teaspoon vanilla extract
  • Juice of half a lemon (about 2 Tablespoons)
  • Zest of one lemon
  • ¼ cup (50g) granulated sugar (for glaze)
  • Juice of half of a lemon (about 2 Tablespoons) for glaze
  • 2 Tablespoons (30mL) warm water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×5-inch loaf pan by greasing it with butter or cooking spray.
  3. Mix together the flour, granulated sugar, baking soda, and salt in a large mixing bowl.
  4. Combine the chopped strawberries gently into the dry mixture.
  5. Whisk together the milk, melted butter, egg, vanilla extract, lemon juice, and lemon zest in another bowl.
  6. Pour the wet mixture into the dry ingredients and stir until just combined.
  7. Transfer the batter to your prepared loaf pan.
  8. Bake for 50-60 minutes, or until a toothpick comes out clean.
  9. Make the glaze by mixing the ¼ cup sugar and lemon juice.
  10. Cool the bread in the pan for about 10-15 minutes before transferring it to a wire rack and drizzling the glaze.

Notes

Serve warm or at room temperature. Pair with whipped cream or vanilla ice cream for a treat!
