Strawberry Pie Enchiladas

A sweet twist on traditional dessert, these strawberry pie enchiladas blend the flavors of strawberry pie and enchiladas for a delightful treat.

  • 6 8-inch flour tortillas
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter, melted
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup water
  • 1 pound fresh strawberries, tops removed, divided
  • 3/4 cup sugar (for pie filling)
  • 1/2 cup boiling water
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Strawberry Filling: In a medium saucepan, combine chopped strawberries, ¾ cup sugar, and ½ cup boiling water. Bring to a gentle boil over medium heat.
  2. Thicken It Up: Mix cornstarch with ½ cup cold water until smooth, then gradually stir into the boiling mixture, stirring continuously to avoid lumps.
  3. Remove from heat and stir in vanilla extract.
  4. Assemble the Enchiladas: Preheat oven to 350°F (175°C). Spread strawberry filling down the center of each tortilla, sprinkle with cinnamon, roll up, and place seam-side down in a greased baking dish.
  5. Make the Sweet Sauce: Combine melted butter, ½ cup sugar, and ½ teaspoon cinnamon in a small bowl, then pour over the rolled tortillas.
  6. Bake to Perfection: Add ½ cup of water to the baking dish, cover with foil, and bake for 25-30 minutes.
  7. Serve and Enjoy: Allow to cool slightly, then serve warm drizzled with the sweet sauce and optional whipped cream.
