Strawberry Upside Down Cake

A delightful twist on the classic dessert featuring juicy strawberries atop a fluffy, moist cake.

  • 2 cups fresh strawberries, halved
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the strawberries in a cake pan by melting butter and sprinkling brown sugar over it.
  3. Mix the dry ingredients in a separate bowl.
  4. Cream together the granulated sugar and unsalted butter until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Combine the wet and dry ingredients gradually, alternating with milk.
  7. Pour the batter over the strawberries in the pan, spreading evenly.
  8. Bake for 30-35 minutes or until a toothpick comes out clean.
  9. Cool the cake for 10 minutes, then flip it onto a plate.
  10. Serve slightly warm or at room temperature.

Notes

Serve with a dusting of powdered sugar or a dollop of whipped cream. For a tropical flair, top with toasted coconut.
