Sugar Cookie Cheesecake

A delightful fusion of sugar cookies and cheesecake, this dessert is sure to please any sweet tooth.

  • 1 1/2 cups sugar cookie dough (store-bought or homemade)
  • 1 package (8 oz) cream cheese
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup sour cream
  • 1/4 cup heavy cream
  • Sprinkles (optional, for decoration)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Take your sugar cookie dough and press it into the bottom of an 8-inch springform pan.
  3. Pop the pan in the oven and bake the crust for about 10-12 minutes, or until lightly golden.
  4. In a mixing bowl, beat the room temperature cream cheese until smooth.
  5. Add in the granulated sugar, mixing until well combined.
  6. Next, add the vanilla extract, eggs, sour cream, and heavy cream, blending until combined and creamy.
  7. Pour the cheesecake batter over your cooled sugar cookie crust.
  8. Pop the cheesecake into the oven and bake for about 30-35 minutes.
  9. Once baked, turn off the oven and let the cheesecake sit inside for about an hour.
  10. Chill it in the fridge for at least 4 hours (or overnight).
  11. When you’re ready to serve, gently remove the cheesecake from the springform pan and top with sprinkles.

Notes

Serve with a side of fresh berries or a drizzle of raspberry sauce for an elegant touch.
