Lemon Bars with Caramelized Nectarines

Delightful lemon bars infused with caramelized nectarines, perfect for summer gatherings or a sweet treat.

  • 1 1/2 cups all-purpose flour
  • 2/3 cup powdered sugar
  • 3/4 cup butter (cold and cubed)
  • 4 nectarines (cut into 1/4 inch thick slices)
  • 1 tbsp granulated sugar
  • 1 tbsp butter
  • 6 large eggs (ideally room temperature)
  • 1 3/4 cups granulated sugar
  • 1 cup freshly squeezed lemon juice (ideally room temperature)
  • 1/3 cup flour

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Mix together 1 1/2 cups flour and 2/3 cup powdered sugar in a large bowl. Add 3/4 cup cold, cubed butter and mix until resembling wet sand.
  3. Press the mixture evenly into the bottom of the lined pan and bake for 15-20 minutes until lightly golden.
  4. Melt 1 tablespoon of butter in a skillet over medium heat, add nectarines and sprinkle with 1 tablespoon of sugar. Cook for 4-5 minutes until soft and slightly browned.
  5. Whisk together 6 eggs, 1 3/4 cups granulated sugar, and 1 cup lemon juice until combined. Add in 1/3 cup flour and whisk until smooth.
  6. Pour the lemon mixture over the crust and distribute the caramelized nectarines evenly on top. Bake for an additional 25-30 minutes until set.
  7. Cool in the pan for at least an hour, then slice into squares.

Notes

Dust with powdered sugar before serving and consider adding a sprig of fresh mint for a pop of color.
