Easy Kiwi and Lime Cake

A bright and refreshing cake bursting with flavors of fresh kiwi and zesty lime, perfect for summer gatherings.

  • 5 Kiwi (peeled and pureed)
  • 1 Lime (zest)
  • 2⅔ Cup Plain Flour
  • 1 Cup Sugar
  • ½ Cup Greek Yoghurt
  • ½ Cup Vegetable Oil
  • 2 Eggs
  • 2½ tsp Baking Powder
  • 1 tsp Vanilla Paste (or essence)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan and line with parchment paper.
  3. Make kiwi puree by blending peeled and chopped kiwis until smooth.
  4. Mix the dry ingredients in a large bowl: flour, baking powder, and salt.
  5. Cream sugar and oil in another bowl until well blended.
  6. Incorporate eggs, Greek yoghurt, lime zest, and vanilla to the sugar-oil mixture.
  7. Combine the flour mixture with the wet ingredients gently.
  8. Add in the kiwi puree and fold into the batter.
  9. Pour the batter into the prepared cake pan and smooth the top.
  10. Bake for about 30-35 minutes or until a toothpick comes out clean.
  11. Cool the cake in the pan for 10 minutes, then transfer to a wire rack.

Notes

Serve with a dusting of powdered sugar or a scoop of vanilla ice cream for an extra treat. This cake is great for making ahead and can be frozen for up to three months.
