Heaven on Earth Cake

A light and fluffy angel food cake topped with creamy pineapple, whipped goodness, strawberries, and coconut.

Ingredients

  • 1 box of angel food cake mix
  • 1 cup of crushed pineapple (with juice)
  • 1 cup of heavy cream
  • 1/2 cup of powdered sugar
  • 1 cup of sweetened shredded coconut
  • 1 cup of chopped strawberries
  • 1/2 cup of chopped nuts (optional)

Instructions

  1. Preheat your oven to the temperature indicated on the angel food cake mix box, usually around 350°F (175°C).
  2. In a mixing bowl, prepare the cake mix according to the package instructions.
  3. Bake according to the box instructions, usually about 35-40 minutes.
  4. While your cake is cooling, in a separate bowl, whip together the heavy cream and powdered sugar until soft peaks form.
  5. Gently fold in the crushed pineapple (with its juice).
  6. Once your cake has cooled completely, flip it upside down and gently remove it.
  7. Place your cake on a serving platter and spread the pineapple cream over the top.
  8. Sprinkle with shredded coconut, layer on your chopped strawberries and any nuts.
  9. Pop your decorated cake into the fridge for at least an hour.

Notes

This cake is best enjoyed cold and can be made a day ahead without toppings.
