Traditional German Blueberry Cake

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup butter (softened)
  • 1 cup milk
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries
  • 1 cup blueberry pie filling
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1/4 cup cold butter, cubed
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13 inch baking pan by greasing it with butter or cooking spray.
  3. Mix the dry ingredients: whisk together the flour, baking powder, and cinnamon in a large bowl.
  4. Cream the softened butter and sugar together until light and fluffy.
  5. Add the eggs one at a time, mixing well after each, then pour in the vanilla extract.
  6. Combine the wet and dry ingredients, alternating with the milk.
  7. Fold in the fresh blueberries gently.
  8. Pour the batter into the prepared pan, smoothing the top.
  9. Prepare the crumb topping by mixing rolled oats, brown sugar, and cold cubed butter until crumbly.
  10. Add dollops of blueberry pie filling over the topping mixture.
  11. Bake for 40-50 minutes or until a toothpick comes out clean.
  12. Cool in the pan for 10-15 minutes before transferring to a wire rack.

Notes

Dust with powdered sugar or serve with whipped cream for an elegant finish. You can also tweak the recipe with different toppings or add-ins.
