Tuscan White Bean Soup

A cozy bowl of Tuscan White Bean Soup packed with flavor, protein, and fiber, perfect for cold days.

Ingredients

  • White Beans (canned or dried)
  • Spinach (fresh or frozen)
  • Tomatoes (canned diced or fresh)
  • Onion (yellow or white)
  • Garlic (fresh cloves)
  • Vegetable Broth or Chicken Broth
  • Olive Oil
  • Herbs (thyme, rosemary, basil)
  • Salt and Pepper

Instructions

  1. Sauté the Aromatics: In a large pot, heat about 2 tablespoons of olive oil over medium heat. Add a diced onion and cook until translucent, about 5 minutes.
  2. Add the Garlic: Toss in 3-4 minced garlic cloves and cook for an additional 1-2 minutes until fragrant.
  3. Stir in Tomatoes: Pour in a 14-ounce can of diced tomatoes (with juice) or stir in chopped fresh tomatoes. Let simmer for about 5 minutes.
  4. Add the Beans and Broth: Add 3 cups of drained and rinsed white beans and 4 cups of vegetable or chicken broth. Mash some beans for a creamier soup.
  5. Season with Herbs: Toss in 1 teaspoon each of dried thyme and rosemary, adjusting salt and pepper to taste.
  6. Simmer: Bring to a gentle simmer and let cook for about 20-25 minutes.
  7. Add Spinach: In the last 5 minutes, stir in 2-3 cups of fresh spinach and cook until wilted.
  8. Serve and Enjoy: Ladle into bowls, drizzle with olive oil, and serve with crusty bread.

Notes

Great with crusty bread on the side. Can be made vegan by using vegetable broth and omitting cheese.
