15-Minute Black Bean and Spinach Burritos

A quick and flavorful black bean and spinach burrito recipe that can be made in just 15 minutes, perfect for busy weeknights.

  • 2 cloves garlic, minced
  • 1 cup onion, diced
  • 1 ½ cups black beans (or 1 can, drained)
  • 1 ½ cups corn (or 1 can, drained)
  • 1 ½ cups spinach (packed, approximately 23 oz)
  • 1 ¼1 ½ cups finely shredded cheese (cheddar, pepper jack, Monterey jack, or a mix)
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • ½ teaspoon kosher salt
  • ⅛ teaspoon ground black pepper
  • 2 large flour tortillas

Instructions

  1. Prep your ingredients by gathering and prepping all your ingredients. Dice the onions, mince the garlic, and rinse the black beans if using a can.
  2. Heat the pan over medium heat with olive oil. Let it shimmer a bit to indicate it’s ready.
  3. Sauté the diced onion and minced garlic in the skillet for about 2-3 minutes until the onion is translucent.
  4. Add the black beans and corn, stir to combine, and warm through for another 2-3 minutes.
  5. Incorporate the spinach, stirring until it wilts down, about 1 minute.
  6. Mix in the shredded cheese off the heat until everything is well-coated.
  7. Taste the mixture and adjust seasoning if necessary.
  8. Wrap the mixture in a tortilla, folding in the sides and rolling it tightly.
  9. Repeat with the second tortilla and toast them seam-side down in the skillet for 1-2 minutes per side.
  10. Serve warm, slicing in half, and enjoy with salsa or guacamole.
