The Ultimate Authentic Canadian Poutine Recipe

A classic Canadian comfort food featuring crispy fries, savory gravy, and ooey-gooey cheese curds.

  • 1/4 cup (32g) all-purpose flour
  • 4 cups (960ml) beef or chicken stock
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon salt + more to taste
  • 1/2 teaspoon black pepper + more to taste
  • 3 tablespoons cornstarch
  • 2 tablespoons water
  • 2 cups (250g) cheese curds
  • 4 pounds (1814g) Russet potatoes, peeled and cut into 1/2” sticks
  • Vegetable oil, for frying
  • 12 tablespoons salt (for frying)

Instructions

  1. Prepare the Potatoes: Start by peeling and cutting your Russet potatoes into 1/2″ thick sticks. Rinse them under cold water to remove excess starch—this helps them get extra crispy while frying. Then, dry them thoroughly with a kitchen towel.
  2. Fry the Potatoes: Heat your vegetable oil to 350°F (175°C), carefully add the potato sticks in batches, and fry until golden and crispy, about 5-6 minutes.
  3. Make the Gravy: Melt the unsalted butter in a medium saucepan over medium heat. Whisk in the flour to create a roux and cook for 2-3 minutes. Slowly pour in the stock, whisking constantly.
  4. Season the Gravy: Stir in the ketchup, Worcestershire sauce, salt, and black pepper. Bring to a simmer and thicken with a cornstarch slurry, then taste and adjust seasoning.
  5. Assemble the Poutine: Layer the crispy fries on a plate, ladle the hot gravy over them, and sprinkle with cheese curds.

Notes

For added flavor, garnish with fresh herbs like parsley or chives. Serve with crispy fried onions or a tangy slaw for contrast.
