Creamy Red Pepper Pasta

  • 12 ounces roasted red peppers (jarred or homemade)
  • 1 can diced tomatoes (15 oz / 400 g)
  • 1 cup water
  • ¾ cup almonds
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon salt (or more to taste)
  • 1 clove garlic
  • ½ teaspoon red pepper flakes
  • 1 handful basil leaves
  • 1 handful shaved parmesan (optional, for garnish)

Instructions

  1. Cook the Pasta: Start by bringing a large pot of salted water to a boil. Add your chosen pasta and cook according to the package instructions until al dente (about 8-10 minutes). Remember to save about 1 cup of pasta water before draining.
  2. Prep the Sauce: In a blender or food processor, combine the roasted red peppers, diced tomatoes, almonds, water, garlic, olive oil, salt, and red pepper flakes. Blend until smooth and creamy.
  3. Heat the Sauce: In a large skillet, pour the blended red pepper sauce over medium heat. Stir occasionally and let simmer for 5-7 minutes.
  4. Combine: Add the drained pasta straight into the skillet with the sauce and toss until every strand is beautifully coated.
  5. Add the Greens: Toss in the fresh basil leaves and stir to combine during the last minute of cooking.
  6. Serve: Plate your Red Pepper Pasta and garnish with shaved parmesan and a drizzle of olive oil.

Notes
