Comforting Beef Vegetable Soup

A hearty beef vegetable soup that warms the soul with its rich flavors and vibrant vegetables.

Ingredients

  • 2 lbs Beef (Chuck or Brisket)
  • 4 medium Potatoes (Yukon Gold or Russet)
  • 2 large Carrots
  • 1 cup Frozen Peas
  • 2 cups Tomatoes (Canned or Fresh)
  • 4 cups Beef Broth
  • 2 tbsp Olive Oil
  • 1 Bay Leaf
  • 2 cloves Garlic, minced
  • 1 tsp Thyme
  • 1/2 tsp Paprika
  • Salt and Pepper to taste

Instructions

  1. Prep your ingredients: Cube beef, chop potatoes, carrots, and tomatoes.
  2. Sear the beef: Heat olive oil, add beef, season with salt and pepper, and brown for 4-5 minutes on each side.
  3. Sauté the veggies: Remove beef, sauté carrots, add potatoes, and deglaze with water.
  4. Add the tomatoes and return beef to the pot, then pour in beef broth.
  5. Season with bay leaf, garlic, thyme, and paprika, adjusting salt and pepper to taste.
  6. Simmer on low for 1.5 hours.
  7. Finish with peas 5 minutes before serving.
  8. Taste and adjust seasoning before serving.

Notes

Serve with crusty bread or cheesy garlic bread. This soup can also be frozen for up to three months.
