Pumpkin Streusel Muffins

  • 1 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/2 cup rolled oats
  • For the Streusel Topping:
    • 1/4 cup brown sugar
    • 1/4 cup all-purpose flour
    • 1 teaspoon ground cinnamon
    • 2 tablespoons cold butter
  • For the Glaze:
    • 1/2 cup powdered sugar
    • 12 tablespoons milk
    • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
  2. Mix the dry ingredients in a large bowl: whisk together the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
  3. Combine the wet ingredients: In another bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth and fluffy.
  4. Combine the wet and dry mixtures by gradually folding the dry mixture into the wet mixture. Be careful not to overmix.
  5. Fold in the chopped nuts and rolled oats for added texture.
  6. Prepare the streusel topping by combining the brown sugar, all-purpose flour, and cinnamon in a small bowl. Cut in the cold butter until it resembles coarse crumbs.
  7. Fill the muffin cups by spooning the batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Top the batter with streusel topping over each muffin.
  9. Bake in the preheated oven for 18-22 minutes or until a toothpick inserted into the center comes out clean.
  10. Cool in the pan for about 5 minutes, then transfer to a wire rack. Whisk together the powdered sugar, milk, and vanilla extract for your glaze and drizzle over the cooled muffins.
