Tilapia in Roasted Pepper Sauce

A delightful dish that combines tender tilapia with a robust roasted pepper sauce, making it perfect for weeknight dinners.

  • 4 tilapia fillets (about 6 ounces each)
  • 2 red bell peppers, roasted and peeled
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 cup vegetable or chicken broth
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 450°F (232°C) and roast the red bell peppers on a baking sheet for about 20-25 minutes until blistered.
  2. After roasting, let the peppers cool in plastic wrap for 10 minutes, then peel and set aside.
  3. Heat the olive oil in a skillet over medium heat, sauté the chopped onion for 3-4 minutes, then add minced garlic and cook for another minute.
  4. Add the roasted peppers, broth, vinegar, smoked paprika, oregano, salt, and pepper to the skillet, stirring well and simmering for 5-7 minutes.
  5. In a separate skillet, heat olive oil over medium-high heat, season tilapia fillets with salt and pepper, and cook for about 3-4 minutes on each side.
  6. Spoon the roasted pepper sauce over the cooked tilapia, letting them simmer together for a minute before serving.

Notes

Serve with steamed rice or a fresh green salad for a complete meal. You can also make the sauce a day ahead and store it in the refrigerator.
