Easy Yellow Squash & Zucchini

A simple Southern side dish featuring sautéed yellow squash and zucchini that’s perfect for any occasion.

  • 2 tbsp Olive Oil
  • 1 large Sweet Onion (finely diced)
  • 3 Zucchini (cut into 1/4” rounds)
  • 3 Yellow Squash (cut into 1/4” rounds)
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Kosher Salt
  • 1/2 tsp Vegeta (or vegetable or chicken bouillon)
  • Fresh Cracked Pepper, to taste

Instructions

  1. Prep Your Ingredients: Wash the zucchini and yellow squash under cool water, then slice both into 1/4” rounds.
  2. Dicing the Onion: Finely dice your sweet onion.
  3. Heat that Pan!: In a large skillet, pour in your olive oil and turn the heat to medium-high.
  4. Sauté the Onions: Cook the diced onion for about 3-4 minutes until translucent.
  5. Add the Zucchini and Yellow Squash: Toss the rounds of zucchini and yellow squash into the pan.
  6. Seasoning Magic: Sprinkle in the garlic powder, kosher salt, and Vegeta. Cook for another 5-7 minutes.
  7. Finish with Fresh Pepper: Crack some fresh pepper over the top just before serving.
  8. Taste and Adjust: Give it a taste and adjust seasoning if necessary.

Notes

Garnish with fresh herbs like basil or parsley. This dish pairs beautifully with grilled meats or chilies.
