Zesty Summer Pasta

A light and flavorful pasta dish featuring spaghetti tossed with lemon juice, garlic scapes, and parmesan cheese.

  • 8 oz spaghetti
  • 4 oz fresh garlic scapes, chopped
  • 1 lemon, juiced
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • Salt to taste
  • Freshly cracked black pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Cook the pasta: Bring a pot of salted water to a boil, add spaghetti, and cook until al dente (9-11 minutes). Reserve a cup of pasta water before draining.
  2. Prepare the garlic scapes: Chop the garlic scapes into 1-inch pieces.
  3. Sauté the scapes: Heat oil in a skillet and sauté the garlic scapes for 2-3 minutes until they soften.
  4. Add lemon juice: Squeeze in the juice of one lemon and stir to combine.
  5. Combine pasta and sauce: Add the drained spaghetti to the skillet, tossing to coat. Add reserved pasta water as needed.
  6. Add the cheese: Stir in parmesan cheese, letting it melt into the pasta.
  7. Finishing touches: Garnish with chopped fresh herbs.
  8. Serve: Plate the pasta, drizzle with olive oil, and enjoy!
