  • 1 lb Italian sausage (spicy or mild)
  • 3 medium Yukon Gold potatoes, sliced
  • 2 cups chopped kale
  • 1 cup heavy cream
  • 4 cups chicken broth
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 1/2 tsp crushed red pepper flakes
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Prep your ingredients: Dice the onion, mince the garlic, wash and chop the kale, and slice your potatoes thinly.
  2. Brown the sausage: In a large pot, add a splash of olive oil and cook the Italian sausage for 5-7 minutes.
  3. Sauté the aromatics: Add the diced onion and minced garlic, cooking for 2-3 minutes until fragrant.
  4. Add the sliced potatoes and chicken broth; bring to a boil, then simmer with a pinch of salt and pepper.
  5. Incorporate the cream: Stir in the heavy cream once the potatoes are tender (15-20 minutes).
  6. Finishing touches: Add kale and red pepper flakes; simmer for an additional 5 minutes.
